The Importance of Hygienic Design in Food Industry Plants
During the design and maintenance of a plant, it is essential to consider not only its functionality and efficiency in supporting the production process but also its hygienic performance.
In the food industry, proper management of plants—including design, maintenance, and sanitation—is a fundamental requirement established by European Union regulations governing the sector (Regulation EC 852/2004 and subsequent amendments). These requirements are also reinforced by voluntary certification standards recognized by the GFSI (such as IFS, BRCGS, and FSSC22000).
The layout of the infrastructure and the characteristics of the equipment are critical for safeguarding public health, ensuring that Food Business Operators (FBOs) deliver safe food to the market. In addition to selecting materials suitable for contact with food, as required by MOCA (Materials and Articles in Contact with Food) regulations, the following aspects are crucial:
- Mechanical resistance
- Drainage capacity to facilitate cleaning operations and ensure accessibility to components
Welding in Hygienic Design
Welds are a critical aspect of hygienic design and must meet the following essential criteria:
- Continuity
- Homogeneity
- Absence of roughness or porosity
In a plant designed for food processing, it is vital to eliminate corrosion phenomena, which could result in material release during contact with food. Grooves or rough surfaces where product deposits might accumulate must be avoided, as these are difficult to clean and could lead to contamination—or, in the worst-case scenario, to biofilm formation resistant to sanitation treatments.
Solutions Adopted by Granzotto
Granzotto has taken meticulous care during the construction phases of its plants, particularly in treating welds to ensure they are corrosion-resistant and meet the aforementioned hygiene standards. After welding, the joints can be treated individually to remove oxides and/or residues from the surface. The primary treatment methods include:
- Mechanical treatment: The weld seam is cleaned using brushes with an abrasive effect or by micro-blasting with ceramic or stainless steel spheres.
- Chemical treatment: The weld is treated with pickling and/or passivating agents (chemicals that are hazardous to workers and environmentally harmful).
- Electrochemical pickling: Using an electric arc positioned between a brush and the weld seam, a pickling agent is applied.
- No treatment: The weld is left untreated.
I test effettuati
- spazzolatura meccanica
- micropallinatura con sfere in ceramica
- micropallinatura con sfere in acciaio inox
- decapaggio chimico
- decapaggio elettrico
- decapaggio e passivazione.
Risultati emersi
